This thing puts out some serious heat. Just remember that also means it uses some serious propane. The set up is easy. You connect the tank, turn it on adjust the air flow valve for a blue flame, adjust the flame height valve, then turn the tank up. I had 7 gallons of water at an intense boil in about 20-25 minutes instead of an hour or longer it takes on my stove. I didn't have it maxed either as I am trying to make the gas last a bit longer. Once we were at a boil I was able to drop it down a bit to maintain.I wish the hose was a bit longer, I don't like the tank being a few feet away from the burner but that is how they all come. Make sure you let this puppy cool down and use gloves when you move it later.I fired this up for about 20 minutes the first day to burn off anything that shouldn't be there but I didn't get the black smoke as others did.

Plug and play, works great. Like others say, the gas line could be a bit longer, but we're talking braided steel, it's not like it's going to catch on fire. Just as good as a 150+ dollar model.

I don't have any tools to measure the BTU so this review will be purely based on my cooking experience. I use this high pressure cooker to fry authentic Chinese food at home since I found the normal household cook is way too weak. This cooker provide very strong fire & heat to fry food quickly enough. I am very happy about it. Also it is easy to use.
But I do realize one con of this cooker for Chinese cooking: the surface is flat and that does not fit any of the authentic Chinese wok. For Chinese cooking style, the proper way is soaking the wok at least half into the cooker so that the entire bottom can be heat equally. But it is not feasible for this cooker. Same as other buyer mentioned, only the centre part is touched by the fire and fire burns the cast iron paint so the black coat will be white after use. I spent about 5 minutes burning the painting to get rid of the bad smell and any other potential toxic stuff.

Suggestion: If the manufacture can make a new model without this flat top surface so that user can soak wok into it, then that will be perfect!

5.0 out of 5 stars Big Cooking Power, small Amazon.com price!
Reviewed in the United States on September 22, 2010

I bought this to brew my beer, and I'm really happy I did.

After making beer in the kitchen for many years, my wife finally had enough of the brewery in her kitchen. With my marching orders in hand, I went online to find an outdoor cooker. After searching brew sites and the lot, I ended up back at Amazon. Needless to say, they had the often cited cooker, the Bayou Classic SP10, at a great (ok, best) price. I placed my order, and upon arrival I was amazed at the size of this thing. It' much bigger than I imagined. Read the specifications to know what you are buying, it is pretty big. That being said, it makes for a great brewer's heat source. It puts out the heat in spades. It's stable, and it is easy to use. Great!

As others have mentioned, there's a smell from the paint burning off, so it's a good idea to run it for 20-30 minutes before you use it for cooking the first time. I put my brew pot on there with a bunch of water and it had it boiling in just a few minutes. After letting the paint burn off after 30 minutes, I dumped that water and started over with my brew ingredients. I was at my first protein rest in a matter of minutes. Each heating cycle was a breeze and I was able to get a great rolling boil going without any difficulty. Getting the boil dialed in wasn't too difficult either. Cleanup was the easiest I've had. I pulled out the hose and rinsed off the patio. I like this outdoor cooking.

The amount of power this puts out is quite amazing. You need to be careful you don't empty out your propane tank in only a few minutes. That said, I had a solid boil going on a very low setting. I raised it to a higher flow rate to speed the heating process along when raising the temperature, but full power seems a waste of gas to me.

    Overall: Great outdoor cooker!

    ***UPDATE*** ***UPDATE*** ***UPDATE*** ***UPDATE***

After having the Bayou Classic SP10 for nearly a year, I am still loving this purchase. 100% happy with the build, output, and overall usefulness of the burner. I've had nearly 4 gallons rolling on a rather low setting. PUMPS out the heat. I'm now brewing in the garage most of the time. It burns up a lot of 02 and puts out lots of CO2, so be sure to crack open a door or window if you are inside with this thing. No issues with any of the parts.
Zero complaints. I would buy this again (but won't need to since it appears it will last a lifetime).

5.0 out of 5 stars Incredible. Huge improvement from store-bought kits
Reviewed in the United States on November 6, 2016

I don't typically review products... To be more accurate, this is the first review I've written after being an Amazon customer for years. That said, this is the first product that was far enough above my expectations to really make me want to write a review. For those who this review is too long for, please note: the first portion is not about this product, but about the product I originally purchased in store that this product replaced in order to provide a comparison. The very end of this review is actually about this particular product.

A year and a half to two years ago, I received a store-bought turkey fryer as a gift. It was the typical setup most big box stores sell, where you get the large stock pot with lid and thermometer, regulator, stand, etc. The stock pot and accessories (turkey holder, hanger to remove the holder, thermometer) were all fairly decent. The thermometer still works well two years later, none of it has any rust, it's all in pretty good shape. The stand and regulator, though, were not as good.

The regulator that came with my fryer had a little button timer on it. The idea is that every 15 minutes you have to push the button or it shuts off your gas. This ensures you're actually paying attention to your fryer. The problem here is that sometimes the timer would last a full 15 minutes. Then again, sometimes it would only last 5 or 6 minutes before shutting off. There was no real consistency to it. The end result was that either you stood next to it 100% of the time to ensure you hit it as soon as it tripped, or you'd walk over well within the 15 minute window only to find that it had gone out early, extinguishing your flame and allowing your oil to cool. This wasn't hard to keep track of on comfortable days, but when it starts to get cold and wet around Thanksgiving/Christmas, having to stand next to your regulator from start to finish was pretty inconvenient.

The stand that came with my fryer, on the other hand, wasn't just inconvenient, it seemed downright dangerous. The design was stamped metal that was riveted together and wasn't very strong. By applying VERY light pressure to any of the bars, you could easily bend/flex it. So, when you put the stock put full of oil on it and added a turkey, it got very flimsy and wobbly. Not exactly what you want when you're dealing with oil heated to several hundred degrees. Unfortunately, as the stand aged, it only got worse, and far less stable. Finally, when I pulled it out of the pantry a couple weeks ago to get things ready for Thanksgiving, it was to the point where I was no longer comfortable using it. Just sitting with the empty pot on it, it seemed very unstable. I have little doubt that, had we have used it, it would have collapsed. So, this led to my purchase of the Bayou Classic stand and regulator.

Right off the bat, I was thrilled to see the regulator did NOT have the annoying and inconsistent timer. It had a high quality, braided steel hose instead of the typical cheap rubber hose, and was everything I wished the original that came with my fryer would have been. The stand was WELL above my expectations. Every piece of it is thick, welded steel. Nothing stamped, nothing riveted. It is probably 5 times the weight of my original stand (not heavy, just a noticeable increase in weight). This is the kind of stand that lasts a lifetime. There is absolutely no give, no flexing, no bending, and no stability issues at all. For the price, I would not only gladly buy this again for myself, but am planning on buying a few to give as gifts to family members/friends who I know have the cheaper stands that came in their kits. I couldn't be happier.

If you want to upgrade your current setup from the cheap nonsense you get in the store-bought kits, or are planning on investing in your first fryer setup (or setup for seafood boils, etc) and just want to make sure you get the most for your money and something that will last, this is DEFINITELY the way to go.

I use it for WOK cooking. Tricky to adjust flame, turn it down low and it goes out, could be better. Purchased an iron WOK RING for preferred round bottom WOK. So far so good. Burning in a new WOK is very easy and fast. Great way to pan fry steaks as well. Stir fry rice is a piece of cake and tasty. No more stove to clean up!
Update: Feb 11, 2019. I use this every few days for WOK and with my LODGE CARBON STEEL PANS. Not one problem! I love cooking outdoors, especially frying as it’s easy to hose off my porch! No stoves to clean. Paint looks new. Great for burning in a new WOK. These cookers work perfect with the high temperature carbon steel pans. As long as you keep your pans seasoned they clean up quickly with steel/copper pads. Buy some grease screens of various sizes to keep oil in your pans while using high heat to fry. Buy one, buy a WOK RING. I set mine up on a very sturdy/stable aluminum table at stove top height so I don’t have to lean over it. Then move it back to ground or back yard for fish fries as needed. I have made a special spice/sauce bottle box tray that I bring out so once I start the gas cooking mission, I have everything I might need right there on the spot! Don’t forget to buy high temperature mits with fingers for both hands just to be safe! If you start a fire accidentally you want to able to move pans etc with out getting burned! Silicon mitts are cheap, don’t take a chance. I also have a GOOD FIRE EXTINGUISHER nearby! Now your ready...........

4.0 out of 5 stars Great for Frying Turkeys
Reviewed in the United States on December 3, 2014

Just used this for the first time last week to deep fry 2, 13 lb turkeys. Thought I should post a review to clear up some areas of confusion. It was easy to assemble and is very sturdy. The steel hose is nice upgrade over the rubber hoses you get with other models. I don't know how many BTU's the burner is but it BLASTS out some heat. I used this model along with the Bayou Classic 1118 32-Quart Stainless Steel Turkey Fryer. I filled the pot to the max fill line with peanut oil and it was able to heat the oil to 350 degress in 24 minutes. And that was outdoors in 40 degree weather, and it was windy (10-15 mph), AND I left the oil in the garage overnight so it was not room temp to start. Actually, the main reason I didn't give it 5 stars was that it was hard to keep the oil from getting too hot. Because of the wind, when I tried to turn the flame down, it would occationally blow out. Not a big deal as it is easy to restart and only happened a couple times in 2+ hours of deep frying. Like other reviewers noted, the paint does burn off when you first light it up, but by the time the oil got hot it was basically done burning off the paint.

Overall this is a great outdoor propane burner for frying turkeys. It's a little hard to control the temp outside if it is windy, but otherwise no problems.

5.0 out of 5 stars High quality outdoor cooker
Reviewed in the United States on January 3, 2013

When looking for an an outdoor cooker I was disapointed with the quality of most that I found. They all seemed to be pretty flimsy and could only support the 30qt cooking pot they came with. In order to get a better quality I decided I needed to spend a little extra money and purchase the cooker and the cook pots separately. It was a great decision. The Bayou Classic SP10 is a great cooker that has a sturdy, welded frame and a large, flat burner that can support a very large cook pot. The other major issue with gas cookers is the flame jet. If the jet is too big you get a broad but weak flame that takes forever to get anything hot. If it's too small you get a nice, blue, hot flame that is so tiny it doesn't distribute the heat well. The jet that comes with this cooker is just the right size and can boil 20 qts of water in about 20 minutes. The cooker frame is constructed such that the flame is sheilded from the wind so the flame is always directed at the base of your pot. The adjustment valve is smooth and allows you to precisely adjust your flame to control temperature and prevent boilovers. You have to buy the cookpot and accessories separately, but that's a good thing as it gives you choices. I chose the Bayou Classic 1118 32-Quart Stainless Steel Turkey Fryer which is the perfect size for a 16lb turkey, a 10lb prime rib roast, or a crab boil for 10 (seriously, try the crab boil; it's amazing).
