One question we get asked a lot, is how we are able to produce knives of such exceptional quality at such an affordable pricetag. It’s simple: we’ve combined the best premium Japanese materials, with the best craftsmen and expert bladesmiths in the historic knife making city of Yangjiang, China. Known as “The Capital of Knives”, the knife making traditions in Yangjiang date back over 1400 years to 557 AD, when the army of Lady Xian of Qiao Guo was stationed there during a thirty-five year civil war, which resulted in high demand for the production of steel knives in the area. After the civil war, the resultant knife-making craftsmanship persisted, transforming Yangjiang into one of the most advanced knife making cities in the world. Today, the combination of modern technology and traditional craftsmanship has made Yangjiang the most efficient location to produce Japanese Damascus knives, hence by importing our premium Japanese VG10 steel from Takefu in Japan to Yangjiang in China, we are able to craft such quality knives at such an affordable pricetag.

100% CORROSION AND RUST PROOF!

High Carbon Steel increases vulnerability to rust, so we protect our VG10 steel core with 33 layers per side (hence 67 total Damascus Steel layers) of a corrosion-resistant Damascus Stainless Steel (316L). This has a higher Chromium content which prevents the VG10 core from rusting. Additionally, the outer layers are more ductile than the hard high-carbon VG10 core, providing the perfect amount of ductility to prevent the blade from being brittle and susceptible to snapping.

TOPIC: The best way to sharpen this Damascus Steel Knife:

PRODUCT INFO: While every knife is hand sharpened to a 15°degree angle, and we have carefully selected the steel types to optimise edge retention, sharpening will inevitably be required after prolonged use. We recommend a 1000/6000 Grit Whetstone for this. To preserve the sharpness of the edge, we recommend cutting on blade friendly materials like bamboo and plastic (avoid stone, glass, and ceramics).

TOPIC: How to clean this knife.

PRODUCT INFO: While the stainless steel used in this knife gives it fantastic anti-corrosion and anti-rust properties, we do not recommend washing it in the dishwasher. Why? Because the heat, moisture, and detergent inside a dishwasher impact the sharpness of the blade and the ultra precise 15°degree angle. We recommend hand washing with warm soapy water, then rinsing with fresh cold water, and towelling dry before storage.

PRODUCT INFO: The handle is made of military grade G10 (a high-pressure fiberglass laminate with epoxy resin), a non-porous and waterproof material that ensures durability thanks to its outstanding heat, cold, moisture, impact and wear resistant mechanical properties.

PRODUCT INFO: This carving knife is perfect for carving all joints of meat, including beef, chicken, pork, and lamb, as well as being able to tackle larger joints like Turkey on Christmas Day. It is also a true multipurpose cooking knife, and can be used as a utility knife for cutting and chopping foods like vegetable, bread, steak, cake, pastry, lettuce and salad. The ultra sharp knife can even be used as a butchers knife, meat knife, meat chopper, and filleting knife for fish, while the 2.2mm – 2.5mm blade make it the perfect Japanese sushi and sashimi knife.

PRODUCT INFO: NO! Why? Firstly, because of the carefully selected 316L steel type we use to protect the VG10 core, which provides optimal ductility and prevents a brittle blade vulnerable to snapping. Secondly, because our knife has a reinforced ‘full tang’ handle to prevent breakages where the handle meets the blade.

I actually bought this carving knife off the back of how much I liked the chef knife version, and I have to say I’m equally impressed at the quality of this knife for the value. Great balance, nicely weighted, very sharp, and has a lovely carving action. Will have to wait to see how to edge holds up over time, but since I purchased in November has made light work of all kinds of meats, such as the two pieces of Bavette in the picture!

    Its a good knife. Ive yet to get the edge perfect and having worked in many busy top restaurants for over 30 years, I know a good knife.
    Its good value for the money. It can hold an edge and is decent steel. The sales speak of surgucal sharp is sales speak. That does not detract from it being a very good knife.
    The balance is nice which is important if your using a knife for accutrate cuts, which would be a resonable expectation from this knife or using it for a long period of time. i.e. working on a carvery, it would not strain the wrist.
    Over all, ignore the sales talk from ambitous sales people, the reality does not need to be sold for the price it is a good purchase, if you are a home user or a smal restaurant this kinfe is an excellent choice.
    For true chefs in top very busy kitchens, you will notice, the edge will not hold to your expectations. To be fair to buy a knife which will , costs at least double if not tripple.

    A really fantastic carving knife! The Damascus steel is so beautiful and the blade is seriously sharp, and stays sharp - I haven’t had to sharpen it since it arrived and is still cutting great with minimal effort. It feels great in the hand, well balanced, lovely shape. Overall, I don’t think you’ll find a better knife at this price.

    I recently purchased this carving knife, and it has exceeded my expectations. The blade is sharp and precise, allowing me to carve through meats with ease. It is long enough to accommodate larger cuts of meat, yet not so long that it becomes unwieldy.
